I'm trying to get the start date of the survey when sending an email, but I can't find the placeholder that brings this information. I only found {VALIDFROM}, but I wish I wasn't assigning valid from to every user.

I don't think there is a placeholder for this:
manual.limesurvey.org/Email_templates#Email_placeholders

But, as this date is the same for all respondents (unlike the token valid date), you can easily just put the date, it doesn't change for the respondents.
