i have to use a 7 point scale instead of a 5 point scale. Is there an easy way to rescale the 5point questions?

don't use the precoded Matrix (5-point) or so, just use the Matrix, resp. not the "5-point-choice", just "List (radio)".
Here you are free to enter your answer options, how many, wording, etc.

To display the list (radio) horizontally, just set the number of columns to the number of your answer options (in advanced settings).

BTW: Do you really think this is an "Installation & Update Issue"?
