If you have a look at the documentation about question types and how to define your own axes ( docs.limesurvey.org/Question+types&struc...tion_of_subquestions ), you notice that there is a question type called "Array" ( docs.limesurvey.org/Question+type+-+Array ) at which you can easily define values for X- and Y-Axis to use your own labels for subquestions and answer options.

Thanks very much. I found it -- well hidden. This really needs to be made a highlight, as it's not in the expected place. What's needed is a button on Array 1-5 saying "Change Labels". Or just a bold statement in the doc for Array. I'll get around to a suggestion on the wiki once the current panic has ceased :-)

Thanks for the feedback. For one of the next Limesurvey 2 versions (Limesurvey 2.0 is nearly stable, so maybe v2.1 or 2.2) we are planning to create a new survey designer which will make your life easier.
Currently, questions like "5 point choice" are basically a sub-class of a radio or array question with predefined labels.
