I would like to change the blue on the vanilla template to a different colour - #008080. I'm not sure where to find the blue to change it.

There is no built-in facility in vanilla to change the colours globally. You will need to explore the various elements with a browser developer tool and add the necessary style rules to custom.css.

Vanilla Template is the basic bootstrap out of the box.
So you can use tools such as:
