I'm trying to add subquestions to my questions and i've gone through the instructions in the user guide however it seems that i don't have the option on my screen (see attached snip). I have the free subscription, is this a feature that is only available for paid packages? and if not, how can i get this to work?

Only certain questions allow you to add subquestions. In the above screenshot you are using the Huge free text question type which does not allow you to add subquestions/answer options.

Please also note that you can change add/remove questions(or subquestions/answer options) only when the survey is NOT active.
