I am using the online version of Limesurvey, and I have a set of about 120 questions, which I first set up as a 5-Point Array. I'd rather have a 6-point array, ranging from 1 (completely disagree) to 6 (completely agree). I tried to alter the format to Array Columns, but then the answers are placed below each other, instead of next to each other. Is there a way I can get my online limesurvey to have a 6-Point Array with the (dis)agree tags assigned to the answer options?

You have to use a Array (flexible labels) question and then create a labelset with 6 items.
